Paris: Macaron Class at Galeries Lafayette

What happens in the class, and what you take home
This is a hands-on 1.5-hour macaron class run by Galeries Lafayette Paris Haussmann, with a French pastry chef leading a class of 4 to 18 people. The session splits into two stages. First you make the shells: whipping the meringue, folding the almond batter to the right consistency, and piping even rounds onto a tray, which is the step that separates a decent macaron from a cracked one. While the shells bake you move on to the ganache, make the fillings, and then assemble and pair the finished pastries.
You leave with four macarons you made yourself plus two recipes to take home, so the technique goes back in your suitcase with the pastries. The chef works with local organic produce, and the usual flavours are chocolate and pistachio. It suits families, couples and friends equally, and no baking experience is assumed.

The class takes place inside the flagship Galeries Lafayette Paris Haussmann store in the Opera district, not in a separate cookery school. You meet at the "Appartement Lafayette" on the third floor of the main store, "La Coupole", next to the (Re)Store area and the Concierge desk, which sits under the store's famous stained-glass dome.
That location makes it an easy add-on to a day in central Paris: the Opera Garnier is a two-minute walk, and Chaussee d'Antin - La Fayette on metro lines 7 and 9 is directly outside. Sessions run in English apart from the Tuesday 5pm class, which is in French. Book ahead, since weekend slots fill first, and note the class needs a minimum of four bookings to run.
